Pesto Pasta Recipe

Ingredients:

8 ounces (225 grams) of pasta (spaghetti, linguine, or your choice)

2 cups (60 grams) fresh basil leaves

1/2 cup (50 grams) grated Parmesan cheese

1/3 cup (40 grams) pine nuts (you can also use walnuts or almonds)

3 garlic cloves, minced

1/2 cup (120 ml) extra-virgin olive oil

Salt and pepper to taste

Instructions:

In an enormous dish, heat a tablespoon of olive oil over medium intensity. Drain and set aside, reserving some pasta water.

In a food processor or blender, combine the basil leaves, grated Parmesan cheese, pine nuts, and minced garlic. Beat until the fixings are coarsely hacked. 

While the food processor is running, slowly pour in the olive oil until the mixture becomes smooth and well combined. Occasionally, you may need to scrape the sides of the food processor or blender.

To taste, add salt and pepper to the pesto. Remember that the Parmesan cheese can be salty, so adjust the seasoning accordingly.

In an enormous dish, heat a tablespoon of olive oil over medium intensity. Add the cooked pasta to the pan and toss to coat the pasta evenly with the oil.


Add the pesto sauce to the pasta and toss until the pasta is well coated with the sauce. If the sauce seems too thick, you can add some of the reserved pasta water a little at a time to thin it out.
