2 cups all-purpose flour
salt to taste
1/4 cup butter, melted

To make the filling

1/2 cup yellow moong dal, soaked for 2 to 3 hours and drained
3 oil tablespoons
1/4 teaspoon asafoetida (hing)
1 teaspoon ginger-green chili paste
1 teaspoon of cumin seeds
1 teaspoon of chili powder
1 teaspoon of garam masala
1 tablespoon dried mango powder
2 tablespoons of gram flour salt to taste
salt to taste
Frying oil

3 cups of whipped curd
3 tablespoons green chutney
3 tablespoons of tamarind date chutney
Roasted cumin powder, to sprinkle
Chili powder, to sprinkle,
1 cup savings
3 tablespoons coriander leaves, finely chopped

Khasta kachori Recipe Method For flour


Pour all ingredients into a deep bowl, mix well and knead a semi-soft dough with enough water.
Cover the dough with a light, damp muslin cloth and set it aside for 16 to 19 minutes.

To make the filling
Put the moong dal in the mixer and grind without using water. Keep aside.

Heat the oil in a wide nonstick skillet and add the cumin seeds.
When the cumin seeds crunch, add the asafetida mixture and yellow moong dal, mix well and cook over medium heat for a few seconds.
Add ginger-green chili paste, mango powder, chili powder, garam masala, salt, and gram flour and cook over medium heat for 4 to 5 minutes or until the moong dal turns light brown.
Divide the filling into 12 equal portions and set aside.

Divide the dough into 12 equal portions.
Each portion of the dough should last 75 min. METER. (3 ") circle diameter.
Keep 1 part of the filling mixture in the center.
Gather all the edges and close it tight.

Lightly fill the filled portion to 41 mm. METER. (2 1/2 ") diameter. Make sure the filled mixture does not come out.

Lightly press the center of the kachori with your thumb.
Repeat steps 2 to 4 to make 11 more kachoris.

Heat the oil in a deep nonstick kadhai and add 3 kachoris over low heat for 4 to 6 minutes, turn occasionally and fry them on both sides until they turn golden brown.
Take it out on tissue paper.

Repeat method numbers 4 and 7 and fries the kachori.

How to serve Khasta kachori 

Put 2 kachoris on a plate and make a hole in the middle of each kachori.

Add 2/4 cup, 1 tablespoon green chutney, and 1 to 2 tablespoons tamarind chutney.
Pour a little cumin powder, chili powder, and 1/4 cup sev over it.
Finally decorate with 1 tablespoon of coriander.
Serve the crispy Kachodi.
