Traditional and very tasty Udhiyu Recipe of Gujarat

Undhiyu Recipe

Udhiyu is a traditional and very tasty dish of Gujarat, firstly we will prepare Muthiya for this and then after that, a lot of vegetables and spices are put in it, which makes this recipe great.

Ingredients for Muthia - Ingredients for Undhiyu Recipe

Wheat flour = one cup

Gram flour = 2 tablespoons

Fenugreek = one-third cup finely chopped

Ginger garlic green chili paste = 1 tsp

Turmeric powder = half a teaspoon

Salt = as per taste

Refined oil = as per need

Ingredients for spices

Raw peanuts = 4 tablespoons

White sesame = 3 tablespoons

Green chili ginger garlic paste = two teaspoons

Garlic paste = one tablespoon

Coconut = 4 tablespoons grated

Sugar = 2 tablespoons

Coriander Cumin Powder = One and a half Tsp

Celery = 1/2 teaspoon

Turmeric powder = half a teaspoon

Raw peanuts = one fourth cup

 Vegetable vegetables

Sweet potato = 2, cut into half to two inches

Tubers = Peel and cut into large pieces

Ripe bananas = two

Brinjal rounded ones = three small cuts in between

Potato = cut into four pieces

Surti Papdi = 250 grams, prove both the ends, and remove some grains.

How to make Gujarati undhiyu

In a bowl mix wheat flour, gram flour, fenugreek, ginger garlic, green chilli paste, turmeric powder, salt as per taste and refined oil and mix it well.

Now prepare a tight dough by adding water to it as per need. To make our muthiya, a doe is ready and apply a little oil on both hands. Then break a little mixture from the dough and make it. Whichever Mutia you like, prepare it in round or slightly longer shape as you like. Now our muthiyas are ready and will deep fry them.

Put 3 tablespoons of oil in the cooker and let it heat. When the oil is hot, add half a teaspoon of celery. Sow for a while then add Surti Papdi to it and stir it by adding a little salt. Then add a big half cup of water to it and mix it well while stirring the lid of the cooker and let it whistle on medium flame.


Turn off the gas after two whistles, when the pressure of the cooker is over, open the cooker, our papdi is cooked up to 50%, take it out in a plate.

Put four tablespoons of raw peanuts and 3 tablespoons of white sesame in a mixer jar and grind coarsely. Put the oil in the pan to heat, when the oil is hot, put Muthiya one by one in it. Fry it till it becomes golden while it is golden brown, take it out and keep it on a plate.

Now add chopped sweet potato in the same oil and fry it till it becomes slightly golden brown. Then put chopped potatoes in the oil and also add the tubers and fry them both till they turn slightly golden brown.

Heat 7 tablespoons oil in the cooker. Oil seems a bit excessive in the milk, add one teaspoon celery and asafoetida to the oil. Then add ginger garlic, green chilli paste, garlic paste, turmeric powder, coriander cumin powder and fry it while stirring for a minute.

After a minute put peanuts and sesame powder in it, add coconut and mix while stirring and fry while stirring for two minutes.

After two minutes add all the fried curry vegetables, potatoes, tubers, sweet potatoes, brinjal, boiled brinjal, papdi salt, sugar, add a quarter cup of peanuts and mix them well while stirring. After mixing, add a big half cup of water and mix it again while stirring. Close the lid and cook for two whistles on medium gas.


After two whistles, open the cooker and let the gas on. Now put bananas in the vegetable and mix them well while stirring. Turn the heat to medium and keep the lid on top and let it cook for two to three minutes.

After three minutes our eggs are ready, now add green coriander and finely chopped green garlic to it and mix while stirring.

Take out the eggs in a serving plate and garnish them with finely chopped green garlic. A very tasty dandhiu recipe is ready and serves it with hot poori.
